Vegan Cauliflower Bisque

Description

Wonderful fresh cauliflower bisque topped with fresh sauteed mushrooms.


Ingredients

Scale
  • 1 cup cauliflower
  • 1/2 cup white potato
  • 1/2 cup orange bell pepper
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1 cup water
  • 1 cup almond (oat)
  • 1 tsp ginger (grated)
  • 1 cup mushrooms (shitake, enoki or lobster could work )
  • 1 tbsp basil (optional )
  • 1/2 tsp coconut oil


Instructions

  1. Steam cauliflower and potatoes
  2. Cut up bell pepper into big chunks but don’t cook it.
  3. Puree lightly everything together
  4. Saute the mushroom for 3-5 minutes in 1/2 tsp coconut oil. Place as topping with basil on finished soup.
