Carrot Coconut Sweet Potato Soup

Ingredients

  • 2 cups carrots
  • 2 cups sweet potatoes
  • 1 shallot
  • 1 inch fresh ginger
  • 1 inch fresh turmeric
  • 1 tsp miso
  • 1 slice lemon
  • 1 clove garlic optional
  • 1/2 cup dried coconut
  • 1 cup veggie broth
  • 2 cups water
  • Salt to taste
  • Pepper to taste

Instructions

  • Slice carrots, sweet potato, ginger, turmeric, lemon and shallot and place on sheet pan.
  • Bake at 350 F for 60 min or until soft (you can cover while cooking)
  • Add 2 cups hot water to the dried coconut and let sit for around 30 min to make homemade healthy coconut milk.
  • Puree everything together until smooth and top with nuts/seeds as desired.
