Vegan Kale Chips


  • Total Time: 2 hours 15 minutes

Ingredients

Scale
  • 4 cups sliced dino kale
  • 1/2 cup soaked raw cashews (can also use soaked sunflower seeds)
  • 12 tsp spice blend of your choice – i love Pav Bhaji masala. Other options are chili spice blend (curry, herbs de Provence or poultry seasoning)
  • 1 tbsp nutritional yeast
  • 12 tbsp sauerkraut or 1 tsp of lemon juice if not available
  • 1/2 cup water


Instructions

  1. In small bowl combine soaked cashews (soak for 1 hour minimum), nutritional yeast, water, spices, lemon juice or sauerkraut
  2. Puree finely in high speed blender
  3. Cover the kale with this mixture
  4. Cook on lowest setting of your oven until crispy. I have a warming oven that is around 170…. if you have a dehydrator, that would go overnight.
  5. Eat instead of chips!
