Try this quick and easy pureed anti-oxidant rich soup.
Ingredients

- 2 cups carrots
- 2 cups sweet potatoes
- 1 shallot
- 1 inch fresh ginger
- 1 inch fresh turmeric
- 1 tsp miso
- 1 slice lemon
- 1 clove garlic (optional)
- 1/2 cup dried coconut
- 1 cup veggie broth
- 2 cups water
- Salt to taste
- Pepper to taste
Instructions
- Slice carrots, sweet potato, ginger, turmeric, lemon and shallot and place on sheet pan.
- Bake at 350 F for 60 min or until soft (you can cover while cooking)
- Add 2 cups hot water to the dried coconut and let sit for around 30 min to make homemade healthy coconut milk.
- Puree everything together until smooth and top with nuts/seeds as desired.
