Description

Try this quick and easy pureed anti-oxidant rich soup.


Ingredients

Scale
  • 2 cups carrots
  • 2 cups sweet potatoes
  • 1 shallot
  • 1 inch fresh ginger
  • 1 inch fresh turmeric
  • 1 tsp miso
  • 1 slice lemon
  • 1 clove garlic (optional)
  • 1/2 cup dried coconut
  • 1 cup veggie broth
  • 2 cups water
  • Salt to taste
  • Pepper to taste


Instructions

  1. Slice carrots, sweet potato, ginger, turmeric, lemon and shallot and place on sheet pan.
  2. Bake at 350 F for 60 min or until soft (you can cover while cooking)
  3. Add 2 cups hot water to the dried coconut and let sit for around 30 min to make homemade healthy coconut milk.
  4. Puree everything together until smooth and top with nuts/seeds as desired.
