I’m sharing recipes this month for #veganuary. I had other plans to create more and slightly different content however I’ve been sick most of the month now with Covid so plans have had to change. And these meals are what we have been eating as I have been healing. 💕

Adding sheet-pan cooking to you weekly food prep can be invaluable tool to improve how quickly meals get done. I didn’t really incorporate it until I was quite old and have been surprised by the both the taste and ease through which it gets done.
Here is my pro tip…. I set the cooking timer on the oven between 60-90 minutes so that the oven automatically goes off. This is so great from my standpoint as I was routinely burning things along the way! SO glad to be on the other side of smelling all the veggies start to burn and being too late to use them in a meal.
