Ingredients
- 1 cup cooked gluten free pasta
- 1 cup cut lightly steamed fresh peas
- 1/2 cup thinly sliced Brussel sprouts (can lightly steam as well)
- 1/2 cup diced cucumber
- 1/4 cup leeks
- 1/4 cup black olives
- 1/2 cup chopped parsley
- 1/2 cup chopped dill
- 1/2 cup sunflower seeds
- 1/2 tsp lemon rind (finely diced/julienne )
- Vinaigrette
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar (or lemon juice )
- 1 tsp capers
- 1/2 tsp Dijon mustard
Instructions
- Boil and cook pasta. (Don’t overcook). Rise and let cool.
- Chop veggies.
- Mix ingredients for vinaigrette.
- Combine everything together.
- Let sit for at least 30 minutes to allow flavors to combine.
