Ingredients
- 1 head of romaine lettuce, chopped or 4 cups fresh salad greens
- 1 cup green beans, trimmed and blanched (boiled fur 3-5 minutes in hot water)
- 1 cup cherry tomatoes, halved
- 1/2 cup thinly sliced red cabbage
- 1 cup cooked and chilled yellow potatoes, sliced
- 2 Persian cucumbers sliced
- 1 cup arugula (tear apart if bigger leaves)
- 1/2 cup sliced radishes (optional)
- 1/4 cup finely minced spring onion
- 1/4 cup pitted green olives sliced thinly
- 1/2 cup Fresh parsley, chopped (optional)
- 1/2 cup Fresh dill, chopped (optional)
For the dressing:
- 3 tablespoons extra-virgin olive oil
- 2–3 tablespoons lemon juice (adjust to your palate)
- 1–2 tsp Dijon mustard (adjust to your palate)
- Salt and pepper to taste
Instructions
- In a large salad bowl, arrange the chopped romaine lettuce or salad greens as the base.
- Arrange the blanched green beans, cherry tomatoes, halved potatoes, cucumber slices, arugula, sliced radishes, green onion, and green olives on top of the lettuce.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper to make the dressing.
- Drizzle the dressing over the salad, and gently toss to combine all the ingredients.
