Here’s an interesting fact – making crispy french fries is both an art and a science. It turns out that it’s the high starch contact in a potato that blocks the release of moisture. When this happens the potatoes become soggy and brown.
So a great tip is to soak the potatoes in cool or ice water for at least 30 minutes prior to cooking. You can also have them in a bowl and rinse until the water is clean. Pat them dry and then they’re great to put any topping on.
If you save the starch at the bottom of the bowl you could use it in any way that you use starches for example thicken a soup.
When you’re ready to cook you can cover them with all your favorite toppings and combinations. This is Rosemary truffles, salt, and pepper. Then you can cook in the oven and a low heat setting around 350 for 45 to 50 minutes. You can also do an air fryer for 10 to 15 minutes. We love this and it’s a great tip for low-fat fries.
