Creating Summer Mocktails Using Berries

Berry shrubs for mocktails are one of our vegan nonalcoholic treats. In our home, we don’t consume alcohol. This mixture is such a gorgeous base for a mocktails at summer picnics and get-togethers or just as a treat with your love. You can combine so many flavors to create what you desire. This one is fresh berries and local lavender and is just amazing color. Imagine drinking lavender! Above all, shrubs create the most exquisite tastes and colors. Berry lavender shrub for mocktails is sure to be a new favorite.

What is a shrub?

A shrub is a mixture of vinegar, salt and sugar that is used to mix with carbonated water to make a drink. The ratios vary however I’ll share how I made this below. In colonial times, they perhaps had alcohol however now, they more often than not are a vinegar syrup.

The colors on this come together so beautifully. After the vinegar mixture is made, you can let it sit in the fridge for some time and it will turn into the most amazing lavender color. Mix this with juice, water, or tonic water to create some of the most creative mocktail flavors in town. Truly this is a fun way to reduce or eliminate alcohol consumption. Crafting your own flavors

When you decide to create a shrub, the combination of flavors is unlimited. Berries and fresh herbs all have different complexities. I’m thinking I will keep exploring these over time as they are so delicious on a hot summer day. I’m so excited to share this with you as I only recently started drinking them.

Even if you don’t have fresh herbs, you can definitely use just berries and it will be delicious. Summer is the best time and I found that this keep for about a month in the fridge, perhaps longer though best to consume on the early side. The acidic environment tends to exist as a preservative.

Please find the recipe below on we make this however do know that you have the possibility to add less sugar and adjust for your own palate. Also, please note that not all sugar is vegan and that the recipe really doesn’t work without the sugar. With that being said, we don’t drink this daily in our home. It is something we think about as a treat.

Description

Try this wonderful shrub as basis for summer mocktails.


Ingredients

Scale
  • 1 cup berries (such as raspberries, blackberries, blueberries)
  • 1/2 cup organic sucanat vegan sugar
  • 1 cup vinegar (apple cider, white balsamic, rice)
  • 1 tablespoon lavender flowers


Instructions

  1. In a saucepan, mix the sugar and vinegar at a low temperature until the sugar has dissolved. Low temp is better for the sugar.
  2. Clean the berries and place them into the 16 oz washed jar.
  3. Add the lavender flowers to the jar as well.
  4. Let the vinegar and sugar mixture come to room temperature and pour over the fruit.
  5. You can use a fork or muddle to break the berries apart a bit or let them stay whole.
  6. Seal the jar with a clean lid and let sit in the fridge for several day to a week. Depends on you technique as to how long it will last. Usually at least up to a month.
  7. If you think of it, you can turn the bottle several times per day while the flavors are mingling.
  8. You can strain the fruit as you pour it or add the fruit into drinks. If you strain the fruit, it can be used in other dishes or baking.
  9. Some recipes call for mixing the berries and sugar and then several days later adding the vinegar. I prefer this method for ease and completion in the recipe in one day.
