Try This Delicious Coconut Carrot Sweet Potato Soup
Sheet pan cooking is the key to delicious quick plant-based meal prep. Making Coconut Carrot Sweet Potato Soup is going to be quicker than you might imagine and very versatile.
These veggies could be used for a vitality bowl, burrito or soup! Make a bigger batch and have several meals.

Learn to Sheet Pan Cook for Multiple Meals
Adding sheet-pan cooking to you weekly food prep can be invaluable tool to improve how quickly meals get done. I didn’t really incorporate it until I was quite old and have been surprised by the both the taste and ease through which it gets done.
Here is my pro tip…. I set the cooking timer on the oven between 60-90 minutes so that the oven automatically goes off. This is so great from my standpoint as I was routinely burning things along the way! SO glad to be on the other side of smelling all the veggies start to burn and being too late to use them in a meal.
Try this quick and easy pureed anti-oxidant rich soup.
Ingredients
Scale
2 cups carrots
2 cups sweet potatoes
1 shallot
1 inch fresh ginger
1 inch fresh turmeric
1 tsp miso
1 slice lemon
1 clove garlic (optional)
1/2 cup dried coconut
1 cup veggie broth
2 cups water
Salt to taste
Pepper to taste
Instructions
Slice carrots, sweet potato, ginger, turmeric, lemon and shallot and place on sheet pan.
Bake at 350 F for 60 min or until soft (you can cover while cooking)
Add 2 cups hot water to the dried coconut and let sit for around 30 min to make homemade healthy coconut milk.
Puree everything together until smooth and top with nuts/seeds as desired.
