For the Chia Pudding:
1cup unsweetened plant milk
1cup plant yogurt
3/4cup chia seeds
1–2 teaspoon ceremonial-grade matcha powder
1 tablespoon maple syrup (or raw honey) optional (i don’t add)
1/2 teaspoon pure vanilla extract
1 pinch sea salt
For the Mango Puree:
1 ripe mango, peeled and diced
1 tablespoon fresh lime juice
1 teaspoon grated fresh ginger
Toppings (Optional):
Toasted coconut flakes
Sliced almonds
Fresh mint leaves
Chopped pistacios
Passionfruit
Berries
Instructions
Prepare the Chia Pudding: In a bowl, whisk together the almond milk and yogurt and then add matcha powder, maple syrup, vanilla, and sea salt until smooth.
Stir in the chia seeds. Cover and refrigerate for at least 4 hours or overnight, stirring once after 30 minutes to prevent clumping.
Make the Mango Puree: Blend the mango, lime juice, and ginger in a blender until smooth.
Assemble & Serve: Layer the matcha chia pudding in serving glasses and top with mango puree. Garnish with coconut flakes, almonds, and mint.
