Growing up, cooking artichokes was an integral part of my life. In fact, I think it is where I first learned about mindfulness. I am excited to share more info today about how I use and cook artichokes. And will in the near term have a video with more information about this. Here is a recipe for you to use!
2 tbspfresh herbs (thyme, oregano, dill, basil could all work)
Determine fresh herbs in the garden that would give complementary flavor. Consider using thyme, rosemary or sage. Bring 8 cups of water to boil in pan that can handle a steamer or is double boiler with steamer insert.
Once water is boiling, add the artichoke and cover tightly.
Cook for 30 minutes with boiling water. Check for doneness around 25 minutes by pulling leaf off with hand protection (its hot! ) I use tongs. If the leaf come gently, it is done.
Serve with roasted garlic aioli.
Jump into my IG reels to see the artichoke creation in action. I have found that broiling it after steaming takes so much less time than cooking the whole time on the grill but yet the flavors still come in really nicely.
