Zesty Rainbow Slaw Delight

Zesty Rainbow Slaw Delight

Phytonutrient rich Zesty Rainbow Slaw Delight for Picnics

Summer is the best time for bringing in whole ingredients into your picnics. And now with many more interested in creating a diet that is phytonutrient rich, we can celebrate the new season.

Zesty Rainbow Slaw Delight brings so many colors and flavors together that you might not have tried before. I found the using a mandolin to get these vegetables thinly sliced is a key to really enjoying the flavors and reduces the time for making it. Find the one I use on this page RESOURCES.

Zesty Rainbow Slaw Delight

Nutritious Dense Zesty Rainbow Slaw Delight

To make this recipe vegan, we’re using a vinaigrette that is rich in flavor and not as calorie dense as the mayonnaise based ones that we may be most familiar with.

This makes the recipe healthier and perfect for those who want to enjoy it with their summer sandwiches and wraps and it adds a dense doses of phytonutrients as well.

Forward this post to friends who would like to have more plant-based food in their lives or save to your Pinterest files.

Colorful salad for 4th of July Picnics

Zesty Rainbow Slaw Delight

I love to point out here how pink the colors are of the fennel and apple. The color change happens when we add an acid to the red cabbage. The pH shift causes the anthocyanins present to pop out with their purple and violet colors. It is so wonderfully vibrant and immerses the whole dish at the same time.

The food we eat has a major impact on our health, but the way we prepare it can also have an effect. Eating a diet high in processed foods, sugar, and unhealthy fats can lead to many health problems, such as obesity and heart disease. But what if I told you that changing these factors could make all the difference? Just by cooking your meals with whole food, plant-based ingredients, you can improve your health. Grab this free recipe ebook that incorporates flavors and principles from my Ayurvedic and Lifestyle Medicine training and it is 100% plant-based.

Here are some great facts about the vegetables present in this dish:

  1. Red Cabbage: Red cabbage is packed with nutrients and antioxidants, including vitamins A, C, and K. It is also a good source of dietary fiber and provides anti-inflammatory benefits.
  2. Fennel: Fennel is rich in vitamin C, fiber, and various minerals. It has been known to aid digestion, support heart health, and promote immune function.
  3. Pomegranate: Pomegranate arils are high in antioxidants, particularly polyphenols, which help protect against cellular damage. They also contain vitamins C and K, and dietary fiber.
  4. Granny Smith Apple: Granny Smith apples are known for their high fiber content and vitamin C. They are a great source of antioxidants and may help regulate blood sugar levels.
  5. Sesame Seeds: Sesame seeds are a good source of healthy fats, protein, and dietary fiber. They also contain essential minerals such as calcium, iron, and magnesium.
  6. Cilantro: Cilantro adds a fresh and vibrant flavor to the slaw. It contains antioxidants and may aid in digestion and detoxification.
  7. Lime or Yuzu Juice: Lime juice is rich in vitamin C and adds a tangy flavor to the vinaigrette. Yuzu juice, a Japanese citrus fruit, has a similar taste profile and can be used as an alternative.
  8. Cumin: Cumin not only adds an earthy and aromatic note but also offers potential health benefits, including aiding digestion and providing iron and other minerals.

Not only is this recipe easy to make, but it’s also perfect for those who are looking for a vegan cole slaw option. By using fresh and seasonal ingredients, this recipe is a guilt-free treat that you can feel good about eating.

Zesty Rainbow Slaw Delight

Zesty Rainbow Slaw Delight

  • Author: Dr. Siri Chand
  • Total Time: 30 minutes
  • Yield: approx 4 cups 1x

Description

“Add a burst of vibrant flavors to your summer spread with our refreshing Red Cabbage, Fennel, Pomegranate, Apple Slaw. A healthy and zesty side dish you’ll love!”

Ingredients

Units Scale
  • 1 small head of red cabbage, thinly sliced
  • 1 fennel bulb, thinly sliced
  • 1 Granny Smith apple, julienned
  • 1/2 cup pomegranate arils

Vinaigrette

  • 2 tablespoons sesame seeds
  • 1/4 cup chopped fresh cilantro
  • Juice of 12 limes or 2 tablespoons yuzu juice (adjust to taste)
  • 12 tablespoons extra-virgin olive oil (depending on your preference, taste it before putting on the veggies)
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

1. In a large mixing bowl, combine the sliced red cabbage, fennel, julienned Granny Smith apple, pomegranate arils, sesame seeds, and chopped cilantro.
2. In a separate small bowl, whisk together the lime or yuzu juice, extra-virgin olive oil, ground cumin, salt, and pepper until well combined. Adjust the seasonings to taste.
3. Pour the vinaigrette over the slaw ingredients and toss gently to coat everything evenly. Make sure the slaw is well-dressed.
4. Allow the slaw to sit for 15-20 minutes to let the flavors meld together. This will also help the cabbage and fennel soften slightly.
5. Just before serving, give the slaw a final toss and garnish with additional sesame seeds and cilantro, if desired.
This is a great summer salad to bring in the cooling flavors. Here are some fun facts about what is in the salad. It is rich in vitamin C, fiber, and antioxidant polyphenols.

My husband and I got excited about instacart during the pandemic and now use it from time to time.

We recently spent time moving my mom out of her condo and afterwards it was such a treat to have the groceries delivered.

I have found with good instructions that I can get what I requested and I have not had any bad experiences to date.

If you are a busy professional, look into instacart as a way to eat healthier when you schedule is really busy.
