To make this recipe vegan, we are removing the eggs and tuna. However, there are great options to add protein back. You can add chickpeas, tofu, or even grilled tempeh to enhance the favors.

1 head of romaine lettuce, chopped or 4 cups fresh salad greens
1cup green beans, trimmed and blanched (boiled fur 3-5 minutes in hot water)
1cup cherry tomatoes, halved
1/2cup thinly sliced red cabbage
1cup cooked and chilled yellow potatoes, sliced
2 Persian cucumbers sliced
1cup arugula (tear apart if bigger leaves)
1/2cup sliced radishes (optional)
1/4cup finely minced spring onion
1/4cup pitted green olives sliced thinly
1/2cup Fresh parsley, chopped (optional)
1/2cup Fresh dill, chopped (optional)
For the dressing:
3 tablespoons extra-virgin olive oil
2–3 tablespoons lemon juice (adjust to your palate)
1–2 tsp Dijon mustard (adjust to your palate)
Salt and pepper to taste
Instructions
In a large salad bowl, arrange the chopped romaine lettuce or salad greens as the base.
Arrange the blanched green beans, cherry tomatoes, halved potatoes, cucumber slices, arugula, sliced radishes, green onion, and green olives on top of the lettuce.
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper to make the dressing.
Drizzle the dressing over the salad, and gently toss to combine all the ingredients.
Garnish the salad with freshly chopped almonds
Serve immediately and enjoy your modified vegan salad Niçoise!

Feel free to adjust the quantities or add any other vegetables or ingredients of your choice. Enjoy your delicious vegan salad! If you would like more protein, you can add chickpeas, grilled tofu or baked tempeh.
