Try these Slow-Cooker Vegan Jackfruit Salsa Verde Tacos
A quick and easy weeknight meal. I’ve been sharing more food this morning for #veganuary and to encourage adding more plants to meals. Eating vegan jackfruit salsa verde tacos is a new favorite in our home.

This is something you could serve to your non-vegetarian friends and surprise them. It’s a great substitute for shredded meat from a texture standpoint and blends with sauces nicely.
Food Can Be a Powerful Tool for Creating Health
The food we eat has a major impact on our health, but the way we prepare it can also have an effect. Eating a diet high in processed foods, sugar, and unhealthy fats can lead to many health problems, such as obesity and heart disease. Getting rid of the heavy pork version of these tacos with this plant-based recipe is a healthy option.
These tacos are rich with spices and flavor that provide an appetizing approach to any meal. Adding any greens towards the end of cooking helps keep their color and flavor alight.
Reiventing Classic Dishes Can Take Time
One tip that took me a while to figure out was to rinse the jackfruit. It is preserved in citric acid which often gives a tinny, acidic taste. Rinsing or soaking in water before cooking really helps this.
This meal can be prepped in less than 5 minutes and we generally have the ingredients available. You can find jackfruit at Sprouts or Whole Foods.

Cook on the stove or slow cooker for 45-60 min at simmer setting until flavors are well combined
Add fresh spinach after cooking
Top with avocado, lime juice, green pepper
