This is one of my favorite additions to a vegan charcuterie board. It adds a rich pull of flavor and texture that few other things mimic. This was one of the first recipes I dove into in my plant-based explorations over 30 years ago. I have tried several iterations of this recipe, including using hemp for walnuts, but this is the recipe I always come back to.

Mushrooms are nature’s gift, offering both flavor and function. Rich in vitamin D, they support bone health and immunity, making them especially valuable in plant-based diets. Mushrooms also contain beta-glucans, compounds that enhance immune function and reduce inflammation.
In Ayurveda, mushrooms are categorized as earthy and grounding. They are not always recommended, but spices like ginger, turmeric and cumin can bring balance. These spices shift the flavor and amplify mushrooms’ digestibility, creating a nourishing and easy dish on the stomach.

Ayurvedic Insight: Mushrooms and Doshas
Here is how to think about this Vegan Mushroom Pâté from an Ayurvedic standpoint.
Pitta Neutral: Mushrooms are gentle on pitta, especially when sautéed, which mellows their natural umami.
Kapha Balancing: Mushrooms’ earth element can increase Kapha if consumed in excess. Warming, pungent spices like black pepper and turmeric counteract this, making the dish more balanced.
Vata Nourishing: Their moist (slimy) texture can pacify vata, especially when paired with healthy fats like olive oil or coconut oil (or ghee if you are not plant-based). As mentioned earlier, mushrooms are not recommended in some more strict paradigms.

Vegan mushroom pate is a delightful and savory spread that captures the earthy flavors of mushrooms in a creamy, plant-based form. Perfect for appetizers or as a tasty snack, this pate is simple to make and sure to impress even the most discerning palates.
Toast the walnuts: Toast them for 7-10 minutes in 350F oven, turning once. They are crispy brown when done but not burnt.
Sauté the mushrooms: Heat olive oil or vegan butter in a pan. Add sliced shiitake mushrooms and sauté until about 6-8 minutes. Add the garlic (if using) and cook for another minute.
Blend: In a food processor, combine the sautéed mushrooms, toasted walnuts, miso paste, peanut butter, lemon juice, spices, salt, and pepper. Blend until smooth and creamy. Adjust seasoning if needed.
Chill and serve: Transfer the pâté to a dish and refrigerate for 30 minutes to let the flavors meld together. Serve it chilled with crackers, bread, or fresh veggies.
I love it even more after a day or two in the fridge.
